What does it mean to dream about red?

Freud
Freud read intense colour as a carrier of strong feeling, and red could mark desire or the heat of anger pressing toward the surface. He would ask what in waking life had raised your blood. The colour itself rarely stood alone, but lit whatever it touched.

Jung treated colour as a register of affect, and red as the warmest of these, the colour of blood, life, and passion. It can mean love or rage, vitality or warning, and the dream's mood usually tells you which. Notice what the red was attached to and how you felt looking at it.

Under the continuity view, a vivid red in a dream often follows from waking emotion, something that stirred you, alarmed you, or quickened your pulse. It can also simply echo a red thing you saw or thought about that day. Your own association is the surest guide.

Across many cultures red marks both life and danger, the colour of blood spilled in war and of blood that gives birth. It dressed gods of love and gods of battle alike, and warded off harm on doorposts and thresholds. It is a colour people have rarely felt neutral about.
